Chicken Pot Recipe with Vegetables

If you want to get the kids to eat veggies you should follow this yummy chicken with vegetables recipe; this chicken pot is what every mom needs. Chicken Pot Recipe with Vegetables for healthy body

Ingredients (serves 6 people)
  • 8 to 12 chicken pieces
  • 4 chorizo sausages, chopped
  • 1 onion, chopped
  • 1 green, red and yellow sweet pepper, diced
  • 2 to 3 chilies, finely chopped
  • 4 teaspoons chopped garlic
  • Dried mixed herbs to taste
  • 1 litre stock
  • Half a bottle of white wine
  • 2 large carrots, chopped
  • 1 cup rice (or more, if desired)
  • Salt and freshly ground black pepper to taste

Directions
  1. Brown the chicken pieces in the pot in small batches, add the sausages and sauté for 1-2 minutes. Then remove the chicken and chorizo and set aside.
  2. Now sauté the onion in the same pot, then add the sweet peppers and chilies and sauté until translucent before stirring in the garlic and mixed herbs.
  3. Return the chicken and sausage to the pot, pour the stock and white wine over, and cook for 30-40 minutes. Then add the carrots and top that with the rice. Cook for another half hour, until the carrots are soft and the rice is cooked. Season to taste and enjoy!
