Chocolate Cupcake Recipe with a Hint of Sea Salt

Ingredients (serves 12 people)
  • 110g unsalted butter, softened
  • ½ cup sugar
  • 4 large eggs, at room temperature
  • 450g chocolate syrup
  • 1 tablespoon vanilla extract
  • 1 cup flour
  • Coarse sea salt
  • For frosting:
  • ½ cup heavy cream
  • 225g semi-sweet chocolate morsels or chopped chocolate
Directions
  1. Preheat oven to 160 degrees Celsius and line muffin pan with 12 cupcake liners.
  2. In a mixing bowl, cream butter and sugar with an electric mixer until fluffy.
  3. Beat in eggs, one at a time. Mix in syrup and vanilla.
  4. Add flour and mix just enough to combine. Overbeating will make the cupcakes dense.
  5. Spoon batter into liners, dividing evenly and bake for 25 minutes. Test with a toothpick until barely done. Let cupcakes cool for about an hour before frosting.

  7. For frosting, combine cream and chocolate over double broiler. Stir until slightly thickened.
  8. Dip top of cooled cupcake into frosting and sprinkle with sea salt.
